Response to Growing Food Insecurity in Eastern Kentucky

Appalachia (October 30, 2025) – In recent months, Christian Appalachian Project (CAP) began to see an increase in the number of families seeking assistance at our network of food pantries. Currently, there are many families who are unsure how they will continue to feed their children and seniors who are uncertain what programs will help meet their needs.

In Eastern Kentucky communities, the stories are urgent and heartbreaking. One local parent shared, “I don’t know what I’m going to do. I’ll have to let my bills go in hopes to catch them up later just to feed my children.” Another participant expressed concern about the possibility that they will not have enough food for Thanksgiving this year.

“CAP stands ready to meet this moment,” said Tina Bryson, CAP’s Director of Communications. “Our team is expanding food distribution, increasing inventory, and working with partners to ensure we can meet the needs of our neighbors who are hungry. We will not turn our backs on Appalachia.”

Just this week, Lifeline Lexington Centre delivered 3,800 meals to CAP to distribute to children, their families, and seniors facing hunger.

Some local pantries have already run out of food, and families are going to nearby counties to try to feed their families. “We had one family that stopped by our pantry and they had young children,” said Libby Wasserbeck, who manages two of CAP’s pantries. “The parents said they hadn’t eaten in three days. We are working every day with our partners, donors, and supporters to meet this increasing need.”

Staff have also been highlighting available services through CAP’s Family Life Counseling Services. “For families that are facing these uncertain times, it is important for us to consider the mental health stressors this poses for our participants as well. We are working to meet a variety of needs,” Wasserbeck added.
